Thai Red Coconut Curry
Our new recipe is a modern take on a classic Thai Red Curry. The protein-packed rice & black bean base is mixed with tamari roasted mushrooms, fresh red peppers and edamame beans. The real hero of the dish and is the beautiful broccoli, featured here both with its florets and stalks to deliver a delicious crunch & mild flavour while reducing food waste by using a part of the veg that would otherwise be discarded.

tamari roasted mushrooms
Our mushrooms have been roasted with tamari sauce, the thicker and less salty cousin of soy sauce. Tamari adds a rich umami flavour to the dish
Edamame beans are a good source of both protein and folate, which helps contribute to the reduction of stress and fatigue
